Viticulture
Practicing organic viticulture. Goblet-trained, north facing orientation in the upper region of San Vicente de la Sonsierra, in the foothills of the Sierra Cantabria mountain range. Due to the small size of the project, all viticultural duties including pruning, leaf pulling, plowing by horse, selecting cover crops, and digging soil pits are all carried out by Eduardo.
Soils
Developed on a Miocene deposit evolved in-situ with deep colluvial deposits, sandy-loam texture and 40% limestone with 7% active limestone.
Climate
Continental with great Atlantic influence and moderated by the Sierra Cantabria.
Winemaking
The grapes undergo rigorous manual sorting. The whole clusters macerate for 10 hours and after a very gentle press, free-run juice ferments spontaneously in small 1,000L French oak upright vats. No malolactic fermentation.
Aging
12-16 months in 1,000L upright French oak vats.
Comments
Cuentaviñas' white wine follows the tradition of naming their wines after the unique characteristics of the soils of their single vineyards. In this case, it's a nod to the rugged terrain of El Llano vineyard. Arriscado, an adjective meaning "rocky," which perfectly encapsulates the essence of our vineyard. This plot, a collage of colluvial sedimentation, is composed of 55% limestone rocks and gypsum, imparting a distinct stony character and limestone sapidity to our wine. Nestled in the lower part of San Vicente, it's an extension of the colluvial tongue that originates in Peciña, passes through La Rad, and culminates at the Ebro River. Arriscado is a wine with a very mineral and savory character. The wine's stoniness takes center stage, harmonizing with the fusion of citrus and the sapidity and savory character.
