Traditional dry farmed viticulture. Practicing organic gobelet (vaso) trained vines, cultivated completely by hand.
Soils
This southeastern corner of Spain is one of Earth's marble mining capitals - this is the result of the extremely high limestone content in the soils. The soils are of a gravel-sand texture with an high percentage of calcium carbonate and a high percentage of active calcium. The surface of the soils is littered with large blocks of solid calcium carbonate.
Climate
Semi-arid, Mediterranean-continental climate, characterized by low precipitation (approximately 200 mL) and large diurnal shift (temperature changes between day and night).
Winemaking
Rigorous sorting followed by destemming.Whole berry open-top fermentation. Gentle vertical basket press for eight hours. Primary fermentation finishes, and malolactic fermentation begins in new French oak barrique.
Aging
The wine is aged for 11 months in new French oak barrique.

As discoverer, pioneer, founder (Bodegas El Nido, Bodegas Volver), and the single most important modern promoter (Luzón, Casa Castillo, Juan Gil) of the Monastrell variety and D.O.'s Jumilla and Alicante, Jorge Ordóñez created Sylarión in 2022 as a small, confidential, and very personal project with the goal of creating the finest Monastrell-based wine in the southeast of Spain. Nestled between incredible contrasting landscapes, Jorge discovered the city of Abanilla (known in the eighth century as Favanella, the beautiful city), an oasis in the Murcian desert. Majestic golden eagles fly through this sparse landscape of juniper and pine trees, wild thyme, and other Mediterranean herbs. The art on the label of Sylarion is ancient Iberian artwork of the typical golden eagle that can be found in this area.
