Sustainable dry farmed viticulture. High density trellises without irrigation or harmful fungicides, herbicides, pesticides, or chemically synthesized fertilizers. Hand harvested.

Sandy soils intermixed with small chunks of limestone. The surface is intermixed with iron rich red clay.

Winemaking
The grapes are destemmed and a pre-fermentative maceration is carried out for 8 hours before pressing. Temperature controlled fermentation (inoculated with neutral yeasts) at very low temperatures.
Aging
The wine is bottled young after a few months in stainless steel to preserve freshness.

Quadrum White is a blend of 70% Verdejo and 30% Sauvignon Blanc. The region of La Mancha offers ideal growing conditions with a hot and dry climate, sandy soils, and high elevation. Verdejo is Spain's most important indigenous aromatic white varietal. With slightly different harvest times, these two acidic, fresh, aromatic white varietals blend together to offer a balanced elegant white wine.
