Vins el Cep is the pioneering producer of biodynamic and organic estate grown still and sparkling wines in Penedès. This was the first sparkling producer in Spain to employ biodynamic practices at their estate. The viticulture at Can Prats and Miquel de les Planes is certified organic.

Very gentle, low-pressure pneumatic press, with only a 45-50% must extraction, representing the most elegant percentage of the must. The balance of the must is sold off to large, local commercial wineries. Fermentation begins spontaneously and is carried out in small stainless steel tanks. Certified vegan winemaking.
Aging
Four months sur lie with battonage in stainless steel.

Vins el Cep (roughly translates to wines from the vineyard) epitomizes the concept of "grower" sparkling wine. Vins el Cep was the pioneering producer of organic and biodynamically farmed sparkling wine in Spain. Today, the winery produces wine exclusively from estate owned vineyards - not a single berry or liter of purchased must or wine enters the cellar every year. In contrast, Vins el Cep is strict with their selection and sells in bulk to large, commercial Cava producers when quality is not to their standards. Maite Esteve, the matriarch of the company, is the paradigm of the concept of a vigneron. She is a grape grower, winemaker, CFO, label designer, marketer, and director of sales. Ot de Vins el Cep is a certified organic and vegan varietal Xarel-lo from the family's estate owned vineyards.
