The grape (Pedro Ximénez), the soil (Albariza) and the climate (extreme summer) are determining factors in the viticulture of Montilla wines.

Soils

Albarizas (white loam, chalky) soil

Climate

Continental. Hot days/cool nights during growing season. Semi arid.

Winemaking

Our Alvear Fino is aged in a biological way under a clear layer that the yeast creates on top of the wine, known as the velo de flor, that prevents the wine from oxidation and gives it its characteristic aroma and flavour. Our finos don’t need to be fortified as we reach the 15ºC alcohol through fermentation with the Pedro Ximenez must.

Ageing

Criaderas and solera system, traditional method involving rows of casks of american oak under a clear layer of yeast know as the “Velo de flor”. Aging at least 5 years.

Comments
