The historic family estate called Can Llopart de Subirats, located just south of Sant Sadurní d'Anoia, in the heart of the Alta Penedès

Viticulture

The vineyards are farmed organically (certified) and without irrigation. The vineyards are primarily head-trained bush vines while younger plantings are on high density trellises. Following the laws established by CORPINNAT, irrigation is used (with max 8 T/Ha. yields) to establish young vines but older vineyards are dry farmed. All of the vineyards are cared for manually without mechanization. Plowing in the oldest vineyards is done by horse.

Winemaking

Methode champenoise. Hand harvested grapes are whole cluster pressed with very gentle levels of pressure. Base wines are vinified via spontaneous fermentation in small lots ranging from 1,000L to 5,000L to maintain segregration of the vineyard parcels in the cellar. Base wines are aged in tank sur lie for a short period of time before being racked to bottle. Secondary fermentation is carred out in the bottle. Final dosage is less than 6 g/L.

Aging

A minimum of 60 months in the bottle after the secondary fermentation.

Comments

The Llopart family was first granted this estate in 1385, when primary source documentation records Bernardus Leopardi receiving a land grant that was already planted to grape vines. Production of sparkling wine began in 1887 and Llopart was consolidated into a fine winemaking house in the mid-20th century by Pere Llopart i Vilaros. This makes Llopart the longest continuously run family owned sparkling wine house in Spain. The family owns a 500Ha. mountain estate, of which 20% is planted to vineyards. In 2017, Llopart left the DO Cava to establish CORPINNAT as one of the six original founding growers with the goal of premiumizing the image of fine Spanish sparkling wines internationally.
