Vineyards

Four estate grown single vineyards of Garnacha de Monte.

Viticulture

Head trained, dry farmed vineyards that are cared for by hand. Due to the arid climate, in many cases these vineyards receive only one organic sulfur spray per year.

Soils

A wide variety of soil types that vary based on the location of the vineyards on the extinct volcano. Very stony, with varying levels of red clay, limestone, and grey slate. Extremely well drained soils.

Climate

Continental climate with influences from both the Mediterranean in the East and the Atlantic in the North. Varying mesoclimates based on the position of the vineyards on the Moncayo.

Winemaking

The bunches are sorted and fermented in open-top, temperature controlled 4T stainless open top fermenters. Basket pressed.

Ageing

Malolactic and ageing for 24 months in new French (70%) and American (30%) oak barriques.

Comments

Aquilon is the top wine produced from Bodegas Alto Moncayo, and is the result of the top barrel selection from the winery. More often than not, the four oldest estate grown vineyards end up comprising the final blend.
